The present invention provides a method for producing rare ginsenoside by treating a ginsenoside substrate present in a ginseng berry with β -glucosidase, hemicellulase, or a mixed enzyme thereof. The method of the present invention effectively decomposes a plurality of substrates included in a ginseng berry, thereby effectively increasing the content of various types of rare ginsenoside having high bioavailability. Therefore, a rare ginsenoside material produced by the method of the present invention has excellent absorptivity and efficiency, thereby being able to be used as a health functional food or a cosmetic raw material.
